189. Shrimp in Adobo Sauce p.322

I can’t find a recipe for this one online.

Anyone following The Project for any length of time knows that I have a bit of a smoked pepper fetish. I get a little weak in the knees when I see the words “ancho chiles” in a recipe. You start this recipe by searing and soaking anchos, then puréeing them with garlic, onion, oregano, and dash of water. The paste is then fried and thinned with white wine, white vinegar, sugar, and salt. It’s simmered until it’s quite thick, and shrimp are mixed in and cooked. You serve the dish with rice, avocados, and cilantro.

The Good: I’m a sucker for spicy seafood dishes, and this was a lovely way of doing it. It tasted like an actual Mexican dish, and very little like the pathetic excuse for Mexican food you can find in Montreal (with a very few exceptions). I’m an enormous fan of adobo sauces like this because they combine heat, smoky depth, acid, sweetness, and aromatics in one cohesive sauce. It hits all the buttons there are to hit, and leaves me very very satisfied.

The Bad: I’m getting pickier about my adobo sauces, and while this was generally good, I’ve had and made better. My main issue was that there was too much ancho flavour, without enough else to balance it. The smokiness of anchos is wonderful, but it can be overwhelming if it’s too concentrated. I also object to the use of white vinegar, there’s nothing wrong with it, but it’s a missed opportunity, lemon or lime juice would have added another dimension, and white wine vinegar could have been a nice choice too. Similarly, white sugar is just fine, but honey, molasses, or brown sugar could have been more interesting.

While it’s not in any way the recipe’s fault, I decided to get clever and messed this dish up. It annoys me that most recipes call for peeling and deveining shrimp. The 21-25 shrimp called for in this recipe are small enough that eating the vein doesn’t really bother me, getting rid of it is a nice touch, but it’s not strictly necessary like it is with larger shrimp. What really kills me is getting rid of the shells. A huge amount of the flavour in shellfish is in their shells, and throwing it away is just no fun. I usually try to find a way to simmer the shells in some liquid going into the dish to boost the shrimp flavour. In this case I decided that my dining companion and I would just peel our shrimp after cooking. That was incredibly dumb, they were extremely messy, and we ended up losing a lot of the sauce along with the shells.

The Verdict: My love for all things in adobo continues, this wasn’t my favourite example but it worked fairly well, and it’s a good basis to start experimenting from. It took a little while, but no step was too frustrating. The final plate was lovely and colourful, and the cilantro and avocado were excellent compliments to the shrimp. I’ll absolutely make dishes very much like this one again, but I don’t think I’ll be following this recipe letter for letter again.

183. Georgian Pork Stew p.485


The recipe

The Georgian Salsa called ajika, which I blogged about last time totally blew me away. This pork stew uses a lot of the same flavours, and integrates the ajika as an important ingredient, so predictably, I like it a lot. The stew uses some unusual ingredients including summer savory, corriander seeds, fenugreek, and dried marigolds, but nothing I had too much trouble finding.

I really like it when The Book pushes my limits and asks me to try new and different things, but I simultaneously curse The Book for sending me running all over the city trying to find exotic components, and damn them for not using the unusual ingredients that I have easy access to in their recipes. They have to draw a fine line between authenticity and simplicity in designing these recipes, and no matter where they make their stand someone is going to be upset. In general I’ve got to give them credit for striking a fairly good balance, or at least what seems like a good balance to someone living in a major metropolitan centre with easy access to a specialty shops. I imagine trying to do this project in Smalltown USA with nothing but a Megamart at your disposal would be a challenge. From my perspective getting to crush up flowers and put them in my dinner was good fun, but it might be a deal breaking frustration for other cooks out there.

The method for this stew is a little bit unusual. You begin by adding cubed and seasoned pork shoulder to a covered pot without any oil, then turning the heat to high and letting the pork steam for 10 minutes, only stirring it once. I read that instruction about five times because it sounded so unsual, but it worked, the pork released juices and steamed instead of burning or sticking as I feared it would. After 10 minutes the lid is removed and the pork juices are allowed to evaporate, still over high heat. Once the liquid is gone, oil is added and the meat is sautéed until well browned. While that’s going on you make a paste of garlic, summer savory, and salt, which is added to the browned meat and cooked for a minute. You then grind corriander and fenugreek and add them along with chopped red onion, and marigold and cook for a few minutes. A cup of water is added, and stew is braised for an hour. Once the meat is tender fresh cilantro, Georgian salsa, and pepper are stirred in. The stew is served with more of the ajika on the side, and with pomegranite seeds sprinkled on top (which I never got around to).

I don’t think the steam-before-you-sear technique did good things to my pork. I can see this sort of technique working well with a really fatty and tough piece of pork shoulder, but my relatively lean supermarket pork didn’t survive the process very well. The meat gives up a lot of it’s moisture, which evaporates before the meat is browned. The expectation is that the moisture would re-penetrate the meat during braising, and that there would be enough fat in the meat to keep it moist. That didn’t happen for me, the meat gave up it’s moisture, and never really got it back. Nothing is quite as frustrating as a dish that simmered for hours, but somehow ends up dry.

Other than that fairly major complaint the dish was excellent. The flavours were absolutely spot on. The ajika is amazing, and the additional herbs really brought the dish home. The sauce was irresistible, I’m willing to admit that I went at the sauce with a spoon while pretending to put it away in the fridge. I’m convinced that a better piece of pork would have allowed this technique to work, and deliver succulent meat along with the incredible sauce. If you’re using bog-standard grocery store pork I’d recommend skipping the steaming step, browning and braising should be sufficient to tenderise the meat without driving all the moisture out.

Had the pork worked out this would be a no brainer for a five star rating. Dry pork is a fairly major flaw, so I should penalize it heavily, but all said and done I still really enjoyed this meal, and can’t bear to give it less than a

182. Georgian Salsa p.896


The recipe

I know next to nothing about the republic of Georgia, but this salsa has me pricing out flights. This salsa, and the stew I added it to are probably the most memorable things I’ve eaten this year. None of the ingredients used in the dish are particularly exotic, but the flavour is unlike anything I’ve had before. It’s a salsa of coriander seed, fenugreek, cilantro, basil, garlic, red bell pepper, jalapeño, red wine vinegar, and salt. The spices are ground in a mortar and pestle, and then everything goes for a spin in the food processor. I haven’t used fenugreek much in my cooking, although it’s not hard to find, its unfamiliar flavour probably has a lot to do with what appeals to me so much about this sauce.

The word salsa is misleading in this recipe, there’s nothing Latin about it, it’s closer to Indian than anything else. The basil, cilantro, and red pepper make this a very fresh tasting salsa, but it’s power comes from the wallop of garlic and jalapeño. The sweetness of the coriander seeds is so unlike the cilantro leaves it’s hard to think of them coming from the same plant. I’m utterly unable to describe the way fenugreek tastes, or what it adds to this dish. I just went into the kitchen and chewed on a few seeds to try to transmogrify flavour into words, but no luck. Fenugreek makes this taste good, and that’s the best I’m going to come up with. Maybe that’s enough. This salsa takes 10 minutes to make, try it and you’ll see what my incoherence is all about.

I have no idea if this flavour combination has staying power for me, or it’s a passing fad, but for right now this salsa is excitingly different.

152. Herbed Lima Bean Hummus p.15


The recipe

Hummus is a staple of my diet, and although I rarely make them, I quite like lima beans, so, I figured this lima bean hummus was a good bet. I’ve been doing some serious damage to the bean spreads in the book, and this was one of the last ones that really appealed to me. In the end it wasn’t the dip I was hoping for. It took some very nice ingredients, did some very silly things with them, and resulted in a muddy confused mess.

You start this dip by simmering frozen limas, onion, and garlic in water, then stirring in cilantro and parsley and letting the herbs steep. You then drain off the water and transfer the solids to the food processor. They then go for a spin with cumin, cayenne, lemon juice, olive oil, fresh dill, and fresh mint. The dip is then allowed to cool, seasoned with salt, pepper, and lemon juice, drizzled with olive oil, and served.

There were a lot of big flavours going into this dish, but the preparation did them a disservice. The onion and garlic are boiled along with the limas in this dish. Boiling doesn’t do much for aromatics unless you’re making a soup. I’d much prefer to sweat them to take off some of the harsh edges, in exchange for a little caramelization. As it was most of the onion and garlic flavour, and that of the cilantro and parsley, ended up in the liquid the beans simmered in. Five minutes later that liquid went down the drain, and the exhausted remnants of the aromatics went into the food processor. The beans were still very hot at this point, fresh dill and mint were added. Both of those herbs are wonderful when they’re crisp and cool, and they lose something when heated. By the time the dip had come together and cooled to room temperature is was a bland mush. I tried to overcompensate with lemon juice and salt to bring things back to life, but once the flavours are gone they’re gone. I added toasted pine nuts in a last ditch effort to save this dip, and they did moderately improve things, but no one was really thrilled and I had to plow through three days of leftovers.

Beyond the counterproductive cooking instructions, I think there was too much going on in this dip. Between onions, garlic, four different types of herbs, cumin, and cayenne, there were a lot of flavours competing for attention. Granted they were all washed out imitations of themselves, but it was still a busy dish. In fact there was so much other stuff in there, that the lima beans weren’t really a player. They were puréed, so their texture wasn’t an issue, and other than adding a little starchiness they weren’t a big flavour contributor. You probably won’t like this dish, but it won’t be because you don’t like lima beans.

Altogether this dish was entirely forgettable. It wasn’t particularly bad, just another bland mush. It’s only truly frustrating when you’re the one making it. You put fresh fragrant ingredients in, and methodically set about discarding or destroying their goodness, you then serve what’s left.

129. Posole: Pork and Hominy Stew p.486


Epicurious doesn’t have a recipe for this one, but one of the posole recipes I found on there looks great, and might address some of my concerns with this dish.

I was really excited to make this. My dining companion came home raving about the posole at Le Jolifou, a great Montreal restaurant which specializes in Mexican inspired Québécois dishes. A couple of weeks later we looked through The Book, and tried its take on posole. I can safely say that this recipe didn’t live up to Le Jolifou’s exacting standards.

Posole is a Mexican stew, which usually features pork and chiles and always features hominy (confusingly also called posole). This was my first experience with hominy, which are corn kernels that have had the outer hull removed by soaking in an alkaline solution. This is a really cool example of ancient food chemistry. At some point someone decided to boil their corn with a handful of ashes from the fireplace, and found that the corn tasted better and the family was healthier. The treatment makes the corn kernels more digestible, more nutrients become available, and it’s nutritionally complete enough to be a staple food. Without this process people surviving on corn will become malnourished and develop pellagra. Europeans brought maize back from the new world, but didn’t treat it, and pellagra became widespread. I’ve idly wondered what the difference between polenta and grits was for a while, and now I know. Polenta is made from untreated corn meal, while grits are made with treated corn meal, simple, but it wasn’t obvious. If you’re looking to geek out on more food science check out the Wikipedia page on this process, called nixtamalization.

Despite my affection for hominy, this posole wasn’t great. It’s simple to make, just soak pasilla and guajillo chiles in water, then run them through the blender with oregano, salt, cumin seeds, pepper, garlic, tomato, and onion. You then simmer cubed pork shoulder in this sauce for an hour, add canned hominy, and continue to simmer for half an hour more. The stew is served with any combination of radishes, onion, cilantro, lettuce, chiles, lime wedges, and tortillas or tortilla chips.

The sauce has some very nice flavours to it, and I love pork braised with chiles, but the texture wasn’t great. I’m not really sure what happened, but my pork cubes ended up tough and dry, swimming in a thin sauce, with a huge amount of hominy. I would have preferred a thicker chunkier sauce, perhaps leaving the tomato and onion out of the blender, or mashing some of the hominy would have helped to thicken it up. I also would have preferred to shred the pork into the sauce. I found the chunks too big, and not amazingly flavorful. The recipe calls for three 15 oz cans of hominy, which should really be reduced to two. The other recipe I linked calls for 26 cloves of garlic, the version in The Book calls for only one. I’m not sure if I’d up the garlic quite so drastically, but I’d seek out a happy middle. The hominy itself was really interesting, it has a very unique chewy texture, which I liked. I’m not sure I’d really want to eat a whole lot of it at one sitting, it reminded me a bit of the tapioca balls in bubble tea.

As with most stews the posole improved with age. By day three the pork had soaked in more flavour, and softened, and the whole dish was more cohesive. It was perfectly edible, and even enjoyable, but my dining companion’s stellar dinner out had really built up my expectations for this posole, it just couldn’t live up to them.

126. Mexican Corn Soup p.87

I just don’t know about summertime soups. The Book has dozens of cold soups based on fresh sweet fruit and vegetables. I can’t say that they appeal to me very much. In part it’s the dissonance of cold soup that bugs me, but I’m not even a huge fan of hot soups. When I ask myself what I feel like eating, the answer is almost never soup, especially not in August. For a cold soup, this was fine, but I won’t go out of my way to make it again.

You start by sweating garlic, onion, jalapeños, carrot, and celery with cumin, coriander, salt and pepper. Then stock, water, and both corn kernels and cobs are added and simmered. The cobs are discarded, and the soup is puréed in the blender. Once the soup has cooled to room temperature, some whole cooked corn kernels are stirred in along with roasted red bell peppers, cilantro, and cayenne.

A significant amount of effort went into building flavours for this soup, and they were well balanced and subtle, but they faded to the background almost instantly. I picked up the ingredients for this recipe a few days before I got around to making it, and by then the dew-kissed market-fresh corn I’d chosen wasn’t looking as lively as I would have liked. If I’d had really stellar corn maybe the other flavourings’ camouflage act would have been a positive, and I’d be going on about them not getting in the way of the corn ambrosia. As it was my corn could have used a bit of help.

I had leftovers of this soup for a few days, and it was much better on day three than in the beginning. A footnote to the recipe suggests that you can make it up to a day in advance, but I’d ignore that and give it at least two days to come together. We at this soup as our main course with a chunk of baguette and a simple salad. The soup just wasn’t interesting enough to anchor a meal. It might work as a first course, or better yet as an appetizer soup shooter. Those first couple of bites were good, so why not just stop there?

There wasn’t anything spectacular about the soup, but it wasn’t bad either. I used all the leftovers for lunches, instead of letting it moulder in the back of the fridge. It was solidly average. If I made it again I’d add more jalapeño and less cayenne. More of the jalapeño’s fruity complexity would have been welcome, instead of the straightforward cayenne heat. Stirring in a bit of sriracha chili sauce on day two or three improved matters.

Every summer I feel guilty about not eating enough amazing Quebec corn, especially when you can get a dozen ears for a dollar. Making corn soup seems like a great way to use up that summer bounty when you can’t face another ear of corn on the cob. Unfortunately I forget that I’m replacing the problem of the twelve ears of corn staring at me from the vegetable drawer, with five liters of left-over soup.

122. Smoked Salmon Mousse with Salmon Roe and Crudités p.19


The recipe

I was really looking forward to this recipe, but I didn’t expect to like it at all. I’ve never had a salmon mousse before, and it has a certain reputation. Pop culture uses it to indicate that a character is out of touch, horribly backwards, or disturbingly gross. I suspect many people can’t think of THE SALMON MOUSSE without imagining the grim reaper from Monty Python’s The Meaning of Life. It turns out that salmon mousse became popular enough to earn this iconic status because it’s delicious. Maybe its reputation got dragged down along with the casserole-generation’s jellied hot dog and marshmallow salads.

The mousse is made by folding whipped cream into a purée of smoked and canned salmon, sour cream, and tabasco, with scallions and bloomed gelatin stirred in. The mixture is poured into an oiled mold, whose bottom has been lined with cilantro leaves. The mousse is refrigerated, unmolded, and the base is surrounded with salmon roe.

I was surprised at how much I liked this spread over a cracker. The airy mousse had a great consistency. I was worried it would end up gummy and jellied, but the gelatin just barely set it, leaving it soft and smooth. The smoked salmon was the backbone of flavour in this dish, The canned salmon kind of disappeared. The salmons flavour was intense enough that it could stand being diluted in the whipped cream. In a happy accident I quadrupled the tabasco (1 tsp instead of 1/4 tsp), which added some needed punch, and helped to counter the richness. The cilantro leaves were pretty, but I didn’t really think they added anything. If you’re going to top the mousse with cilantro, then it should have some cilantro flavour. Next time I’d chop some up and stir it in. The salmon roe had mixed reactions from the crowd I served this to. It was incredibly intense, and added a burst of salmon essence to the mousse, but some people felt it was a bit much. I enjoyed the roe, and would use it again.

This kind of dish has been out of fashion for a long time, but it’s definitely ready for a comeback. The molecular gastronomy (or whatever you want to call it) set are making savoury gels of everything they can get their hands on, and the food fashion conscious are eating it up. Maybe you can reintroduce the salmon mousse by claiming that your salmon are organic, and telling people you set it with agar agar. Sure it’s whipped fish Jello, but it tastes great, and it’s weirdly elegant. I love that this dish could fit in at a regency banquet, at an “I Like Ike” booster, or as an experiment in geometry from the people behind Ideas in Food.

114. Foolproof Grilled Chicken p.363


The recipe

The blurb before the recipe says that the secret to perfect grilled chicken is to brine it then toss it in a vinaigrette once it’s done. I’ve never really had a problem with my non-brined, non-dressed grilled chicken, but this version does have its charms. Brining makes things taste good by saturating them with salt, sugar, and extra liquid. They remain moist and get the flavour enhancing goodness of salt all the way through the meat. Unfortunately that means brined dishes are really salty. If it’s done right it doesn’t taste all that salty at the time, but I inevitably wake up parched in the night after a dish like this.

We made this dish for some friends we were visiting. They live near San Francisco, which means I got to have my first Whole Foods and Trader Joe’s experiences. Other than amazingly priced wine I didn’t really get what the big deal about TJs was, Whole Foods really was worth they hype though. On the one hand it’s just like every other megalomart, only expensive. On the other good quality organic stuff was everywhere. We just don’t have an equivalent in Montreal, and one opening here would be a big deal for me. We’re taking a mini-break and visiting different friends in Brooklyn this weekend, I’m anxious to get back to a Whole Foods and do a little exploring. Incidentally that means I’ll be away tomorrow through Sunday, so no updates ’till Monday.

I picked up the chicken and herbs for this dish at Whole Foods, and most of the rest of the ingredients for dinner from a cute farmer’s market in Palo Alto. I brined the chicken for three hours instead of the recommended six. I also misread the recipe and added a bunch of lime juice to the brining liquid, it didn’t seem to affect anything, so no harm done. I then made a Thai style vinaigrette of lime juice, garlic, cilantro, mint, red pepper flakes, salt, and oil. I left out the two tablespoons of fish sauce, which the recipe promises won’t make the dish taste in the least fishy. My dining companion’s superpower is detecting fermented fish at even the lowest concentrations, so I decided not to include it.

The Book offers extravagantly detailed instructions on how to grill the chicken. It comes down to searing it for a few minutes, then moving it to indirect heat and letting it cook slowly until it’s done. The breasts will take longer than the leg pieces. Once the chicken is done you remove it and toss it in the vinaigrette. You then put halved limes cut side down over the hottest part of the grill for a few minutes to develop some grill lines. I’m not sure that the grilling of the limes served any purpose, but they did look cool. You can imagine that heating them makes them easier to juice, but I’m pretty sure it’s just a gimmick.

This method did produce a very fine grilled chicken, I’m not sure it was worth the extra effort though. The vinaigrette worked wonderfully, and I’d be happy to try it again as well as the alternate Mediterranean vinaigrette it gives as an option. The brining enhanced the flavour of the chicken, but it really was quite salty. I have a hard time deciding how much the brine actually improved the chicken, because I rarely buy organic, which is naturally more flavourful. I was a very poor scientist to vary both my ingredients and methods at the same time, I’ll need to do some control experiments to figure this out.

I’ve never found grilling chicken to be all that error prone or difficult, so I think I’ll skip the brining step in future. The vinaigrette added nice acidity, and aromatics to the chicken. It was simple to prepare and fragrant, a definite keeper. I liked serving grilled limes with the chicken, they were fun, looked cool, and I liked being given the option of adding as much or as little acidity as I’d like. This was a fairly good grilled chicken recipe, but I don’t think I’ll give up my home-brewed technique.

90. Chicken in Pumpkin Seed Sauce p.360

I had a very mixed reaction to this dish. I made it for friends along with some of the other recipes listed under Mexican in the index. It makes a good deal of food, and we weren’t able to eat it all. On the night of the party I had the chicken and decided it was delicious, I had some leftovers the next day and decided they were gross and that I’d never liked it in the first place. Some time passed and my memories softened, I recalled the chicken fondly again but with a queezy uncertainty. I’d frozen some of it, so I pulled it out when I saw it was time to write the dish up. The verdict? slightly freezer burned. In the end I think there were some really strong elements to the dish, and some fairly weak ones.

A chicken is divided into serving size pieces, and simmered with garlic, onion, cilantro, salt, pepper, and allspice. The chicken is then topped with a sauce of toasted pumpkin seeds, cumin, allspice, cloves, pepper, tomatillos, serranos, onion, garlic, cilantro, salt, and a poblano. The whole thing is then baked and served.

The sauce has some excellent flavours, I really liked everything that went into it, and the combined beautifully. The flavours were really complex, but cohesive. There are a huge number of flavourful ingredients in this sauce, and marshaling their forces this deftly isn’t easy. The sauce’s flavour was the strong point of the dish, It’s texture and appearance were pretty much awful. A light beigey-green sauce over some beige chicken didn’t do much for visual impact. The pumpkin seeds and spices are ground to a powder before being added to the sauce, and the sauce is pureed thoroughly, but it still ended up mealy and unpleasant. I think I just don’t like the texture of ground nuts or seeds in sauces. Maybe passing this sauce through a Chinoise would have improved it, but I don’t have one, and the recipe didn’t call for it.

The chicken itself was a bit of letdown. It’s topped with a flavour packed sauce, but the meat is absolutely bland. It simmers in a broth for ~50 minutes, picking up flavour from the arromatics you added. Unfortunately the chicken flavour is escaping to the liquid at the same time. 3 1/2 cups of the liquid get added into the pumpkin seed sauce, but the other ~3 quarts went into the freezer. The Mexican inspired chicken stock was a nice little bonus from making this dish, but you wouldn’t’ serve your guests chicken you’d used to make stock with first, so why do it here? In the end you have an exhausted chicken covered with gooey boiled skin, yum.

I should emphasize that the sauce for this chicken was really delicious, everything else about the dish is wrong wrong wrong, but it’s almost good enough to make up for it. If I were to make it again I’d grill the chicken instead of boiling it, grind the pumpkin seed mixture into a nano-scale powder, puree the sauce obsessively, then pass it through a hepa filter.

89. Fresh Tomato Salsa p.896


The recipe

I’m pleased to inaugurate the Sauces and Salsas section of The Book with this recipe. This tomato salsa is about as minimalist as salsa can be. It focuses on clean flavours, but left me wishing for a bit more complexity. It’s comprised of diced plum tomatoes, white onion, serrano chiles, cilantro, salt, and water. It’s perhaps more notable for what it lacks. No garlic, no oil, and no lime juice. The garlic is entirely optional, it’s only a standard salsa ingredient for me because I have an unhealthy infatuation with the stinking rose. In fact I didn’t particularly miss it here, and leaving it out does make the dish taste lighter and cleaner.

The lime juice is a crime against humanity though. I suppose the thinking is that tomatoes are fairly acidic, and can stand up on their own without a hit of citrus. I agree that white vinegar would have been out of place, but lime juice adds a mild acidity and a linchpin of flavour. I imagine cilantro, chiles, and lime juice as a perfectly balanced triangle. They’re the mirepoix of Latin cuisine. I hate celery, but if you leave it out of the mirepoix I’m going to notice, and resent you for it.

The salsa felt like exactly the sum of it’s parts, without melding into a comprehensive dish. I usually add lime juice and a bit of olive oil, i.e. a very simple vinaigrette, which I find ties the salsa together, and provides a medium for the flavours to mingle in.

The instructions for this recipe read

Finely chop tomatoes.

Transfer to a bowl, along with any juices.

Stir in remaining ingredients.

It’s got a haiku like simplicity, but the ingredient list doesn’t have the balance those poems strive for. There’s nothing really wrong with this recipe, but a few little additions would make it much more appealing.
