186. Lillie’s North Carolina Chopped Barbecue p.479

Barbecue is one of those things I would dearly love to know a whole lot more about. But living in Montreal means that I’m unlikely to stumble across BBQ competitions, and there are very few pit masters looking to take on an apprentice. My lack of a back yard, or even a charcoal grill makes the situation even worse. This recipe was designed for us city dwellers who want to give apartment barbecue a try. This recipe comes as close as possible to making real barbecue without access to an open flame. It’s basically braised pork shoulder flavoured with cider vinegar, carrot, celery, onion, garlic, and peppercorns. The braised pork is doused in cider vinegar and roasted in the oven for an hour. The pork is then chopped, and mixed with Tomato Barbecue Sauce and warmed through. It’s supposed to be served with white rolls and coleslaw, but it went well with swiss chard and sweet potatoes.

The Good: The real plus of this recipe is that it kinda tastes like barbecue, and you can do it in the kitchen at any time of the year. The pork was moist with a nicely crisped exterior, and the long braise got a lot of flavour into the meat. I’m always a fan of using pork shoulder, because it’s very very inexpensive, and wonderfully flavourful. I think it’s got the best dollar to flavour ratio of any cut of meat out there.

The Bad: Vinegar. The Tomato Barbecue Sauce was too heavy on the vinegar all on it’s own, but the pork was braised in vinegar, then roasted and basted with vinegar before being mixed with a vinegar barbecue sauce. Everyone felt a little bit pickled after dinner.

The Verdict: Overall this was a fairly successful technique for barbecue without a barbecue. It utterly failed to recreate the smoky goodness of outdoor grilling, but sometimes you take what you can get. I know barbecue purists look down on liquid smoke, but I’d consider adding a few dashes when they’re not looking. The flavours in this dish were generally good, and the meat was wonderfully falling apart tender, but the acid was just too much for me to fully get behind.

133. Poached Salmon in Aspic p.318


The recipe

I had so much fun making and presenting this, that even if it been inedible, it would have been worth it. Luckily, it tasted quite good. I absolutely knew that I needed an occasion to serve this dish. In honour of the aspic coated days of yore we organized a retro-potluck extravaganza. People brought cheese balls, bean casseroles, cocktail weenies, deviled eggs, mac and cheese, potato salad, and old fashioned cocktails. Then I brought out a cold fish covered in salmon flavoured Jello. Most people weren’t too sure what to make of it, but it certainly caused a stir.

For people who’ve been following along for a while now, it should be clear that I have an abiding affection for old-school, kind of nasty, but kind of great, dishes. For me this is the ne plus ultra of that style of cooking. It’s got the pressed linen and polished silver grandeur of days gone by, as well as a gross out, dare your friends to eat it, backwardness. I’ve been thinking about trying a salmon in aspic for a couple of years, but after an enlightening conversation with my dining companion’s mother, in which I accused her grandmother of having been a great aspicker, I was determined.

The recipe was quite involved, and time consuming. I started by poaching the salmon in water, with lemon, onion, carrot, celery, bay leaf, parsley stems, thyme, and peppercorns. Then whole poacher went into the fridge for 8 hours to let the flavours infuse. The recipe calls for a 24-inch fish poacher, which I don’t have. The biggest one I could borrow was 19 inches, so I used a smaller Atlantic salmon (4 lbs instead of 6).

Once the fish is chilled, it’s removed to a cookie sheet, and the broth is strained, fortified with white wine, Madeira, thyme, and salt, then reduced. Meanwhile the most painstaking part of recipe begins, the removing of the nasty bits of salmon. Beyond a little trimming of excess bones, and floppy fatty folds, it involves peeling all the skin and dark flesh off the fish. It’s an easy instruction to read, but a delicate and painstaking job.

Once the broth is reduced, it gets a further addition of leek, carrot, celery, egg whites, and crushed up egg shells, and gently simmered. You’re basically making a fish consommé in this step, using the egg whites and shells to trap little particles in the protein net they form, all the nastiness forms a raft at the top, and once you run the broth through a couple of layers of paper towel you end up with a crystal clear broth. This is one of those incredibly simple cooking techniques, that’s undeniably cool. People were going nuts about using gelatin filtration to make unusually flavored consommés a couple of months back, but making the original had its own charms.

The reduced and perfectly clear broth is then added to some bloomed gelatin, and allowed to simmer for a couple of minutes ’till everything is dissolved. The mixture is then chilled in a metal bowl, sitting in a water bath ’till the gelatin just begins to set. Then it’s time to work quickly and get the aspic over the fish. I’ve read more than a few aspic disaster stories, of the gelatin just sliding off its target, or clumping up unattractively. So I was a bit worried about this step, but it worked flawlessly. I spooned on a thin layer, chilled the fish for a while, then topped it with some blanched leeks, and applied another layer of gelatin. All of the remaining aspic went into a baking dish and was allowed to set. I then cut it up and surrounded the fish with little wiggly aspic cubes.

The whole point of covering a salmon in aspic is to keep it moist. Obviously the aspic adds flavour, and texture, but really it’s all about protecting the fish for a banquet presentation. I have to say it did a very good job on that front. The salmon was quite delicious, mild and delicate. For all the aromatics that went into this, nothing overwhelmed. It was more of a subtle background array of flavours. The aspic had a much more concentrated dose of flavour, and I was surprised to like it quite a bit. I wouldn’t sit down to a bowl of aspic, but it had a rich mouth-feel that complimented the salmon, and added little highlights of flavour

It was quite warm the night I served this dish, and we packed about 35 people into our apartment, so it got intolerably hot. Unfortunately the aspic didn’t hold up well under the heat, and mostly melted off my fish within about 15 minutes. Those who got an early serving tried it as it was meant to be, but latecomers only tried poached salmon in Jello soup. I suppose if you were doing this professionally you’d put your serving dish on a bed of crushed ice, but our ice supply was devoted to mixing old-fashioneds, martinis, and Singapore slings.

I was really happy with this dish, from a showmanship perspective this was absolutely worth it. The flavour was very nice, but it couldn’t live up to my expectations for such a dramatic looking dish. It was very mild, and pleasant, which for a crowd pleasing buffet is exactly what you’re looking for. I’m impressed that the recipe is as clearly written and step-by-step easy to follow as it is. I was very afraid going in that this would turn out to be a spectacular failure, but it couldn’t have gone more smoothly. If you’ve ever considered doing something like this, I’d definitely recommend going for it. It was an excellent experience, worthy of a five mushroom rating.

126. Mexican Corn Soup p.87

I just don’t know about summertime soups. The Book has dozens of cold soups based on fresh sweet fruit and vegetables. I can’t say that they appeal to me very much. In part it’s the dissonance of cold soup that bugs me, but I’m not even a huge fan of hot soups. When I ask myself what I feel like eating, the answer is almost never soup, especially not in August. For a cold soup, this was fine, but I won’t go out of my way to make it again.

You start by sweating garlic, onion, jalapeños, carrot, and celery with cumin, coriander, salt and pepper. Then stock, water, and both corn kernels and cobs are added and simmered. The cobs are discarded, and the soup is puréed in the blender. Once the soup has cooled to room temperature, some whole cooked corn kernels are stirred in along with roasted red bell peppers, cilantro, and cayenne.

A significant amount of effort went into building flavours for this soup, and they were well balanced and subtle, but they faded to the background almost instantly. I picked up the ingredients for this recipe a few days before I got around to making it, and by then the dew-kissed market-fresh corn I’d chosen wasn’t looking as lively as I would have liked. If I’d had really stellar corn maybe the other flavourings’ camouflage act would have been a positive, and I’d be going on about them not getting in the way of the corn ambrosia. As it was my corn could have used a bit of help.

I had leftovers of this soup for a few days, and it was much better on day three than in the beginning. A footnote to the recipe suggests that you can make it up to a day in advance, but I’d ignore that and give it at least two days to come together. We at this soup as our main course with a chunk of baguette and a simple salad. The soup just wasn’t interesting enough to anchor a meal. It might work as a first course, or better yet as an appetizer soup shooter. Those first couple of bites were good, so why not just stop there?

There wasn’t anything spectacular about the soup, but it wasn’t bad either. I used all the leftovers for lunches, instead of letting it moulder in the back of the fridge. It was solidly average. If I made it again I’d add more jalapeño and less cayenne. More of the jalapeño’s fruity complexity would have been welcome, instead of the straightforward cayenne heat. Stirring in a bit of sriracha chili sauce on day two or three improved matters.

Every summer I feel guilty about not eating enough amazing Quebec corn, especially when you can get a dozen ears for a dollar. Making corn soup seems like a great way to use up that summer bounty when you can’t face another ear of corn on the cob. Unfortunately I forget that I’m replacing the problem of the twelve ears of corn staring at me from the vegetable drawer, with five liters of left-over soup.

74. Lemon Coleslaw p.193

The recipe

This coleslaw is meant to be served as part of Shredded Pork and Lemon Coelsaw Sandwiches (p.192). I made the slaw on it’s own though. This dish is found in the Sandwiches and Pizzas section of The Book, and this is the first recipe I’ve done from that section. So, let’s open Sandwiches and Pizzas with a coleslaw.

It was a very light, cooling, and fresh slaw. It wasn’t weighed down by a gallon of dressing, and the lemon flavours made the whole dish taste bright and clear. On the other hand, the cabbage retained all of it’s crispness. I like crunchy cabbage in a slaw, but this was going a little too far. My jaw hurt from the effort.

The dish is as simple as you could ask for. Whisk together a bit of sour cream, mayo, lemon zest and juice, water, sugar, salt, and pepper. Stir in sliced cabbage, grated carrots, scallions, and parsley. Let the whole thing sit in the fridge for an hour and serve. The hour in the fridge is supposed to give the sugar and salt in the dressing time to draw moisture out of the veg and wilt them a bit. But, after an hour the cabbage was just a tough as ever.

I sliced my cabbage as thinly as I could with a chef’s knife, and ended up with good looking pieces of cabbage. Maybe I sliced it too thickly for the one hour to be sufficient. If I’d used a mandolin to get narrower slices things might have worked out better. Alternately more time would have done the trick. I had some leftovers the next day for lunch and the texture was much better. Some of the freshness of the lemon had faded, but the whole salad had mellowed, and the cabbage still had a crisp bite without causing jaw cramps.

There were a lot of things to like about this slaw, but it needs some refinements. If I were to make it again I’d toss the dressing on to the sliced cabbage the night before, then add the carrots, scallions, parsley and a little refreshing squeeze of lemon an hour before I wanted to serve it. The flavours are really clean, but a bit unidimensional. If I were to make it again I’d add some sliced fennel into the mix. I really appreciated that the recipe allowed the cabbage to be front and centre. So many slaws are downed with goopy dressings in an attempt to hide the fact that you might be eating cabbage, so this was a refreshing change.

53. Old Fashioned Meat Loaf p.448

The recipe

Take cover! NORAD has detected an extraterrestrial turd loaf coming in fast over the arctic. It wants our Humpback whales to save the future.

This was not the most visually appealing dish I’ve ever made, but it did taste good. I think it’s um, distinctive, shape helped with the flavour too. I’ve made meatloaf in a loaf pan before, and while it’s geometry is soothing, there isn’t all that much surface area exposed to direct heat. This loaf developed an excellent crunchy crust which really made the dish. The secret to the crispy crust was a healthy slathering of ketchup before it went into the oven.

I’m quite proud of The Book for using ketchup here. They didn’t seem to feel bad about it, or tell me that I really should be making my own, or ordering heirloom tomato preserves off the internet. They recommended plain-old funding-John-Kerry’s-political-career ketchup. Maybe this was The Book’s attempt to show that they’re in touch with the common man? who knowns? But I appreciate it.

This is a classic meat loaf recipe that doesn’t deviate or experiment too much. There are a couple of nice touches, but generally it’s straight up memories of childhood comfort food. It starts with a sweat of onions, garlic, celery, carrot, and scallions (one of the slight deviations from the textbook). Then ground beef, pork, breadcrumbs, eggs, and parsley are lightly mixed together and shaped into the giant worm of Arrakis. It’s then covered in ketchup, and baked through.

The book recommends having the butcher coarsely grind beef chuck, and pork tenderloins for this recipe, instead of using the finely textured twice-ground meat that’s available pre-packaged. It wasn’t a command from on high, so I just bought the stuff in the display case. I now see that The Book was right and I was wrong. The flavours in the meatloaf were excellent, its main problem was the texture. It was too tightly packed and dense. Using more coarsely ground meat would almost certainly have taken care of the textural issues, and made this an even better loaf.

My dining companion and I occasionally like to have cook-offs. Kind of like Iron Chef in the privacy of our own home. This dish was my entry for battle meatloaf, and I’m happy to say that it swept the judges votes. Her entry won top marks for presentation and style, but it just couldn’t compete on seasoning and depth of flavour. I’ll have to write the Heinz company to thank them.

50. Winter Vegetables With Horseradish Dill Butter p.526

This version of the recipe makes three times as much as The Book’s, and recommends steaming the veggies for two thirds of the time.

Parsnips, turnips, and Brussels sprouts, horseradish, and dill all in one recipe? My goodness gracious, it’s almost too good to be true. The parsnips, turnips and Brussels sprouts are steamed together, while potatoes and carrots are steamed in another pot. Then everything is tossed with a horseradish dill butter augmented with a hit of cider vinegar.

I admit I cheated a bit and cooked the veggies wrapped in tin foil on the grill, but steaming is steaming right? The biggest trick with the recipe is to get all the veggies to be done at the same moment. For example, by the time my potatoes were finished, the carrots were overdone, and while the Brussels sprouts were still crisp, the turnip was a bit mushy. This is probably my fault, I don’t think I followed the recipe very precisely when it came to cutting the veggies. For example, the carrots are to be cut diagonally into 1 inch long pieces, but the parsnips were supposed to be 2 by 1 inch sticks. They’re pretty much the same shape, so I cut them into pretty much the same size chunks. The nice people at Gourmet spent quite some time experimenting with different vegetable geometries to get this right, I’d recommend taking their advice and not going it alone.

This recipe stars often overlooked and under appreciated winter vegetables, presents them beautifully, and plays up their fundamental bitter nature. I love that the recipe resists the temptation to sweeten, or add cream. The carrots and potatoes keep this from being too bitter, all the while celebrating the joys of roots. The horseradish boldly adds a tangy punch of heat, in fact I could have happily added more. The use of dill makes me think of the dish as Eastern European, and brings romantic notions of hearty Ukrainian farm families fending off the winter’s chill to my mind.

I really enjoyed the flavours and concepts here, but the execution was a bit trickier than the recipe led me to believe.

38. Roasted Carrots and Parsnips with Herbs p.529

I nip, you nip, we all nip for parsnips!

I love them mashed, boiled, grilled, broiled, sauteed, and particularly roasted. They behave almost exactly like carrots, they look like carrots, they taste quite a bit like carrots, and yet… the carrot is a superstar of the vegetable world, and the poor parsnip is drinking alone at the bar slurring “whachs ur problum, not ornge enough fur ya??” at unsuspecting passersby. They’re not as sweet as carrots, but I think they bring a lot more flavour to the table. They’re also a whole lot starchier, meaning that they pretty much have to be cooked.

It’s hard for me to be objective about this recipe, because I’ve been making my own version of it for years. I normally toss carrots and parsnips with oil, salt, pepper, and assorted dried herbs, then roast them. The advantage this recipe has is the addition of water to the pan which helps the vegetables get tender, then as the water evaporates they’re able to brown up. When I make this I generally just use dried herbs, I’m not sure it makes a whole lot of difference in a dish that’s roasted for an hour. That said the sage and rosemary were delicious.

This is one of those pretty basic recipes that’s hard to rate. It would be delicious if you followed the recipe exactly, or if you improvised wildly around it. But it was solid, and it won’t lead you wrong.
